Pacifico
The Pacifico Cocktail is an easy and delicious cocktail I created in 2019 for Cargo Cult Rum. It highlights Cargo Cult's excellent Banana Spiced Rum and introduces a beautiful blend of funky Rum and ripe bananas.
If you love bananas, this cocktail is a must-try. Although it may look like a boozy cocktail, the balance of sweetness and dryness makes the Pacifico Cocktail an exceptional sip. Check the shopping list below if you want to grab all the ingredients at once from one place.
PACIFICO
40ml / 1.35oz Cargo Cult Banana Spiced Rum
20ml / 0.68oz Drambuie Liqueur
20ml / 0.68oz Giffard Banana Liqueur
20ml / 0.68oz Noilly Prat Dry Vermouth
METHOD:
Stir all ingredients with ice.
Strain into chilled Nick & Nora Glass.
Garnish with a caramelised Banana clice.
The Pacifico Cocktail is fantastic as an after-dinner cocktail or as a welcome drink to your party. You can garnish it with a slice of banana without caramelising it, but the caramel makes such a big difference. Try both ways and pick the one you prefer more.
