Rum Manhattan

Elevate your cocktail experience with the Split Base Rums Manhattan, a sophisticated twist on the classic Manhattan.

This exquisite drink features a harmonious blend of two exceptional rums: the rich and robust Appleton Estate and the smooth, refined Flor de Cana.

Each sip unveils layers of complex flavours, enhanced by the deep, dark sweetness of our signature Rum Manhattan preserved cherries to garnish.


RUM MANHATTAN

  • 30ml / 1oz Appleton Estate Signature Rum

  • 30ml / 1oz Flor de Cana 12YO Rum

  • 30ml / 1oz Carpano Antica Formula Vermouth

  • 3 dashes of Angostura Aromatic Bitters

METHOD:

  1. Add all of the ingredients into a mixing glass.

  2. Add ice and stir till chilled.

  3. Strain into a chilled martini or coupe glass.

  4. Garnish with a Rum Manhattan preserved cherry.

TASTING NOTES:

The Split Base Rums Manhattan greets you with a nose of rich molasses and tropical fruit, courtesy of the Appleton Estate. On the palate, the Flor de Cana introduces a silky smoothness with hints of vanilla and caramel. The addition of Carpano Antica Formula vermouth adds a luxurious depth with its rich, complex flavour profile of herbs, spices, and a touch of vanilla. The interplay between the two rums and the premium vermouth creates a well-balanced and intricate flavour experience, with the bitters providing a subtle, spicy finish. The preserved cherry garnish adds a final note of dark fruit sweetness, perfectly complementing the tropical and robust character of this refined cocktail.

RUM MANHATTAN PRESERVED CHERRIES:

  • 260g of Washed Fresh Cherries (leave the stems and pits).

  • Add the Cherries to a 500ml sterilised jar.

  • Add 150ml of Spiced Rum.

  • Add 150ml of Sweet Vermouth Rosso (I recommend using Carpano Antica Formula Vermouth).

  • Add 6 dashes of Angostura Aromatic Bitters.

  • Close the Jar and turn it gently a couple of times to mix the liquids.

  • Turn the jar gently every couple of days in the first week.

  • After two weeks, you are ready to use the cherries.

  • Keep the jar closed and away from sunlight to preserve it indefinitely.
